Fat Butcher is the concept of Western PA native Steven Dawson. Steve has moved around a lot, and has experienced life outside of Pittsburgh for long enough. He brings with him his experience, a love for this city, and a plan to restore a connection.
Whole animal butchery is hands-on work. Knives, hand saws, cleavers and mallets are used to separate each cut. Trim is ground for burgers, sausages, and pâté. The bones are used for stocks and broths. The fat is rendered into lard, tallow and schmaltz. The goal is to use the whole animal and to treat it with respect. The results show through in the quality of products we serve. Local tastes better.
