Now the US’s most ethnically diverse metropolis and fourth‐largest city, Houston’s culinary scene runs the gamut from white‐clothed steakhouses to Indian curry houses and Vietnamese crawfish canteens.

Of course, the most prominent among these influences is Mexican and Tejano culture, whose history runs deep in the Lone Star State. Now, the city is getting its own Mexican and Aztec‐inspired cocktail bar in the up‐and‐coming Lindale Park neighbourhood on the north side of town.

The brainchild of three local hospitality hit makers – Sharif Al‐Amin, Greg Perez and Jesse Gonzalez – the reggaeton‐ soundtracked Monkey’s Tail pays homage to traditional ingredients in drinks like the tres leches‐inspired 3 Milks, made with Santa Teresa rum, pineapple, and strawberry.

To soak things up, find Mexican‐ American pub grub ranging from elote street corn to a bacon‐wrapped hot dog topped with refried beans and chilli con queso.
